  欧阳杰,博士,副教授,硕士生导师。主持或参加教育部留学回国人员科研启动基金、北京市科委科技创新基地培育与发展工程、国家自然科学基金和863项目多项。在Food Chemistry, Carbohydrate Polymer, Journal of Biotechnology, Enzyme and Microbial Technology, Process Biochemistry以及化学学报、植物学报等国内外期刊上发表论文100余篇,其中SCI论文20余篇。已授权发明专利6项,参编专著3本,是辣椒红色素国家标准(GB10783-2008)的制定者之一,中国食品科学技术学会高级会员。

1.林果贮藏与加工过程中的质量控制;

2.食用油脂真伪与掺伪的快速质量鉴别;

3.天然食品添加剂的生产与技术研究,包括天然色素的提取与稳定化技术、咸味香精的制备和工业化生产技术等

4.调味品呈味基础理论以及生产加工技术研究。
